1 How do I choose ski gloves?
Your fingertips should be pretty close or just barely touching the ends of the glove. Like shoes, many people buy too big to get more width for their palm. 

Make sure the gloves fit well enough in the fingertips so that you can buckle your ski boots or snowboard bindings without having to remove them.

2 Are gloves or mittens better for skiing?
Gloves and mittens vary in the amount of warmth they provide. If you are skiing or snowboarding in warmer conditions, you'll probably want gloves or mittens 

that aren't too warm but have good waterproofing. On the other hand, if you ride in colder conditions you'll need warmer gloves.
